The paste has a hard consistency, but with the heat of your hands it becomes malleable and at the same time very resistant. It can be used in the summer to cover cakes and can be rolled out very thinly, up to 1 mm thick, preferably with a pasta machine. Alternatively, it can be mixed with Top paste, especially in the summer. It's best to work it at a temperature below 35 degrees Celsius, as above this temperature the cocoa butter tends to melt. If this happens, let the paste rest until it returns to its original state. Thanks to the large amount of cocoa butter, it hardens quickly but never becomes completely dry, so you can correct imperfections or continue working with it later.
If worked well, it does not have cracks and the subjects created can be preserved for years.
