Stone-ground Maiorca Wholemeal Flour. Organic Sicilian Wholemeal. 1 kg pack.

Wholemeal Maiorca soft wheat flour (Triticum vulgare var. albidum), suitable for doughs with short rising times (4 hours). Ideal for confectionery and small dry pastries (shortcrust pastry, biscuits), and crepes. The bran in the wholemeal product increases water absorption (over 60%) and reduces the extensibility of the dough, compared to the tumbled product (without bran). The flour is obtained from natural stone milling by La Ferté – sous Jouarre, which preserves the germ and, thanks to the low processing temperatures, does not overheat the product, preserving its nutritional and sensory characteristics.
