Type 00 soft wheat flour. Petra® 6363 is the first Petra® flour specifically designed for the production of artisanal Pandoro. The selection of wheat and the dedicated milling ensure maximum ease of absorption of fats and sugars into the dough, even in the absence of water. Petra 6363 is ideal for making artisanal Pandoro. It is tested to achieve the best results both on traditional 3- or 5-dough pandoro and on pandoro made with two doughs, with or without brewer's yeast. W 380 - 400. P/L >0.60
