Organic wholemeal flour made from ancient Sicilian Perciasacchi durum wheat, whose dough requires short leavening times (about 4-6 hours) and good hydration (60%). Suitable for preparing homemade bread and baked goods, both sweet (shortcrust pastry, cakes, muffins, etc.) and savory (pan pizza, focaccia, savory pies). The flour is obtained from La Ferté's natural stone milling, which preserves the germ and, thanks to the low processing temperatures, does not overheat the product, preserving its nutritional and sensory characteristics.
