Petra Maiorca 0202 is a whole-wheat flour made from organic Maiorca soft wheat, grown in Sicily. Maiorca is a characteristic Sicilian variety; it is a white-grained wheat with a distinct sweetness and aroma. It is suitable for making shortcrust pastry, baked cakes, whipped dough, and small sweet and savory leavened products with short rising times. Products made with Petra Maiorca 0202 are lighter in color than traditional whole-wheat flours, with a distinctive sweet flavor accompanied by aromatic notes reminiscent of honey. Milling Sicilian wheat produces a pure-white flour (also available in whole-wheat), with a good protein content and particularly suited to shortcrust pastry and soft breads, with a rich aroma and a delicately sweet taste. Maiorca wheat has survived thanks to its ability to grow well even in arid soil, an ability that makes it a hero among cereals, available even in adverse weather conditions and highly relevant for organic crops facing ongoing climate change.
